We are still in New York City and we are thoroughly enjoying ourselves and we can’t wait to share our experience with you with we get back. In the meantime however we want to share a dessert that will surely hit your sweet spot. While I don’t do candy we tend to do a lot of cookies, cakes etc to make up for it and our everyone just loves the Brown Sugar Cinnamon Bites. I’m sure that you would too. If you plan on involving the kids more in the kitchen this year then this is something I just know that they’ll love. Kids just love eating what they make and the sweeter the better.
Here is what you’ll need:
Brown Sugar Cinnamon Bites
(makes appx. 17)
1 9-ounce roll puff pastry, thawed
1 teaspoon ground cinnamon
1 tablespoon melted butter
1/4 cup toasted almonds, chopped
1/2 cup powdered sugar
1/4 teaspoon ground cinnamon
2-3 teaspoons milk
Preheat your oven to 400∞ F.
Roll the puff pastry out onto a piece of parchment paper. Mine came already rolled up in some, so I just used that.
If your pastry isn’t already in a square, use a rolling pin to shape it into one.
Use a fork to poke holes all around the pastry.
In a small bowl, mix the brown sugar and cinnamon until combined.
Sprinkle all of the sugar/cinnamon mixture over the pastry, making sure to go all the way to the edge.
Roll the pastry up into a log. When you get to the end, gently press it to seal the edges.
Put the rolled pastry in the refrigerator for 15 minutes.
Remove the pastry from the refrigerator and use a sharp, serrated knife to slice it into half inch rounds.
Place the rounds onto a baking sheet lined with parchment paper and return to the refrigerator for 10 minutes.
After 10 minutes, lightly brush the tops with melted butter. Don’t use too much or the pastry won’t rise correctly.
Bake for 10 to 12 minutes or until lightly browned, rotating the pan halfway through cooking.
In the meantime, add the powdered sugar, milk and cinnamon to a small bowl and whisk until smooth. I like to microwave my glaze for about 10 seconds to slightly warm it, which I think helps the cinnamon dissolve.
Remove the bites from the oven and place on a wire rack to cool.
Drizzle the glaze over the bites and sprinkle with a few additional almonds, if desired.
It’s important to keep your puff pastry cold at all times. Be sure to thaw it in the refrigerator and not on the counter. Also, be sure to put it back in the refrigerator as directed in the steps above. Warm puff pastry will not rise.
We used almonds, but you can use any kind of nuts you want – or omit them them altogether!
You could add a little vanilla to your glaze, which would be very good too. If you do this, you’ll have to use a little less milk or the glaze will be too thin.
In lieu of a glaze, you could also sprinkle these with powdered sugar!
