Cheesy Baked Hashbrowns

With the cool weather officially here, I have a thing for cheesy potato dishes. They are simple to make and perfect for those crisp fall afternoons and evenings when you just want something warm and filling. They are even perfect for breakfast if that’s your thing as well. Today I want to share with you this mouth watering Cheesy Baked Hashbrowns dish that is not only delicious but super easy to make.

*Makes approximately 4-5 servings.

Here is what you’ll need:

Ingredients:

1 10 ¾ oz. can of cream of chicken soup

1 can of milk

5 green onions, diced

salt & pepper to taste

16 oz. frozen shredded hashbrowns (Any brand)

1 cup cheddar cheese, shredded or cubed (I always use block cheese so this time around I simply cubed the pieces to save time)

2 tbs. vegetable oil


Directions:

Preheat the oven to 350 degrees and spray a medium size baking dish with non-stick cooking spray (optional but helps with easy clean up).

Heat the 2 tbs. of oil in a frying pan and then cook the shredded hash browns and green onions 8-10 minutes on medium/high. You want to brown them up a bit prior to adding them to the baking dish. This will save on your baking time.

While the hashbrowns are browning, add the cream of chicken, milk, cheese and salt and pepper to the baking dish and mix well.

Once the hashbrowns have been browned to your satisfaction, add them into the mixture and bake 30-35 minutes until heated through.
