Crock Pot Stuffed Pepper Soup

The weather has definitely gotten cooler and most of you have probably gotten your winter clothing ready. The sweaters have been pulled out the closets after being in there all summer long and we’re hunting for boots to complement them this season. One thing that will keep you warm on the inside while it’s cold on the outside is a nice bowl of soup. Today I want to share with this you delicious Crock Pot Stuffed Pepper Soup. Made in your crock pot, you will be able to have a nice bowl once you get home from work. Set it and forget it!


Yields: 8 Servings

Prep time: 15 minutes

Cook time: 8 hours


Ingredients:

1 lb extra lean ground beef

1 cup onion, chopped

14.5 oz. can diced tomatoes with roasted garlic and onions

15 oz. can tomato sauce

2 cups green and red peppers, chopped

3 cups beef broth

1⁄2 teaspoon dried basil

1 cup cooked rice

Directions:

1. Brown ground beef with onion in a skillet over medium heat.

2. Drain beef and onions and place in slow cooker.

3. Add tomatoes (including juice) and remaining ingredients, except rice – which should be added 1 hour before end of cooking.

4. Cover and cook on low for 6-8 hours.
