Cheesy Squash and Spinach Bake

Today I want to share something different than the sweets we have been doing lately. I love cheese on absolutely everything, and a great way to mask the taste of dishes that your kids may not like is to add a bit of cheese. This Cheesy Squash and Spinach Bake will delight your taste buds and have you asking for your. Your kids would like it and so would you.

Here is what you’ll need:

*Makes approximately 4-5 servings. Store covered in the fridge for several days.


Ingredients:

1 medium spaghetti squash

½ shredded cheddar cheese

¼ C. Parmesan cheese

1 tsp. parsley

½ C. of spinach, chopped

¼ C. of green onions diced

salt & pepper to taste


Directions:

Slice the spaghetti squash in half and scoop out the seeds.

Add about 1” of water to a medium size microwave safe dish. Place the spaghetti squash halves insides up in the dish and microwave for 10-15 minutes on high. Check to see if you can scrape the insides out. If not, cook another 5 minutes.

Once the squash is cooked through scrap the inside out and into a separate bowl.

Preheat the oven to 350 degrees and spray a medium size baking dish with non-stick spray.

Combine the cheddar cheese, Parmesan cheese, parsley, spinach, green onions, salt and pepper and spaghetti squash. Mix well and pour into the baking dish.

Bake covered for 20-25 minutes.
