This year I decided that I was going to resume my Keto diet. Many may not realize this, but I'm considerably overweight. Due to my height of 5' 10", it's not apparent by merely looking at me, but it's been a goal of mine to lose as much of the weight that I can.

Last year I decided to start my Keto journey, but a trip to Portugal saw me forgoing my diet entirely and actually packing on the pounds. I've said that Portugal has the best pastries and it found me eating so many Pastéis de Nata, that by the time I returned from my 10-day journey, I had gained over 10lbs, but it was so worth it!

Fast forward to 2020, and while I don't make any resolutions, I did commit to a few goals, and one of those goals is to lose AT LEAST twenty pounds. With that, I decided it was in my best interest to start my Keto Diet all over again. For those who aren't familiar with the Keto Diet, it's a no-carb, high-fat diet. So that means that I've cut out all carbs such as bread.

However, the one thing about being on the Keto Diet, is that it's ok to eat fish, especially fish high in fat content, which Tuna is, as they're a natural source of Omega 3s. It's also great for those looking to eat less meat and more fish, and these StarKist E.V.O.O.™ products are a hit! Not only are they GMO-Free, Gluten-Free & Soy Free, but they are a great source of protein. They are currently three different varieties:

  • StarKist E.V.O.O.™ Wild-Caught Yellowfin Tuna with Sun-dried Tomato in Extra Virgin Olive Oil
  • StarKist E.V.O.O.™ Wild-Caught Yellowfin Tuna in Extra Virgin Olive Oil
  • StarKist E.V.O.O.™ Wild-Caught Pink Salmon in Extra Virgin Olive Oil

The pouches are packed in cold-pressed extra virgin olive oil, and both the tuna and salmon have a rich, mellow flavor and very tender texture. I have to admit that this chunky tuna salad is a total game-changer. I originally learned how to make this from an aunt of mine who taught me how to cook while in the Caribbean. The best part is that you can recreate this in about fifteen minutes.

Chunky Avocado Tuna Salad
Serving Size: 2

INGREDIENTS

1 Package StarKist E.V.O.O.™ Wild-Caught Yellowfin Tuna in Extra Virgin Olive Oil
1 Package StarKist E.V.O.O.™ Wild-Caught Yellowfin Tuna with Sun-dried Tomato in Extra Virgin Olive Oil
1 Ripe Avocado Chopped
½ English Cucumbers Chopped
¼ Cup Red Onions Chopped
2 Boiled Eggs Chopped
1 Tbsp Relish
1 Tbsp Lemon Juice
½ Tsp Curry Powder
½ Tsp Pink Himalayan Salt
Dash of Pepper

DIRECTIONS

Chop your avocado, cucumbers, red onion, and eggs.

Make sure that your avocado is ripe and soft so that you can combine it easily since it will be taking the place of mayo. For those who still want to add mayo, use just a dollop if your avocado isn't as ripe as you'd like it to be.

Since there is no can for you to drain, simply open your StarKist E.V.O.O.™ Wild-Caught Yellowfin Tuna in Extra Virgin Olive Oil and StarKist E.V.O.O.™ Wild-Caught Yellowfin Tuna with Sun-dried Tomato in Extra Virgin Olive Oil and combine together in a bowl with all your other ingredients, including the ones you just chopped.

Serve on a lettuce wrap.

Your chunky avocado tuna salad will last 2 days if covered with a plastic wrap. This prevents your avocado from turning brown. But whether you decide to use mayo or not, remember this wouldn't be the same without StarKist E.V.O.O.™, whether it's the Tuna or Salmon, it's going to be awesome!
