FATHEAD SUGAR COOKIES

Ingredients:

  • 1 cup shredded mozzarella
  • 2 oz (56.7g) cream cheese
  • 3 tbsp softened butter
  • 2 egg whites
  • 1 cup almond flour
  • 1 tsp baking powder
  • 1/2 cup swerve sweetener
  • 2 tsp vanilla extract

Instructions:

  • Put mozzarella and cream cheese in a bowl.
  • Melt them in a microwave for 1 minute. Mix well to combine.
  • In another bowl, mix cream butter, egg whites, sweetener, and vanilla extract.
  • Add almond flour and baking powder and continue mixing until crumbly.
  • Add the cheese mixture to the flour mixture and stir.
  • Make a dough and shape into a ball.
  • Let it rest for 5 minutes.
  • Shape the dough into a cylinder and refrigerate for 30 minutes.
  • Cut it into 12 slices.
  • Bake at 350°F for 15-18 minutes in a preheated oven.



CINNAMON ROLLS

Ingredients:

  • 1 1/2 cup shredded mozzarella cheese
  • 2 tbsp cream cheese
  • 3/4 cup almond flour
  • 1/2 tsp baking powder
  • 1 egg
  • 2 tbsp stevia (cinnamon filling)
  • 2 tbsp water (cinnamon filling)
  • 2 tsp cinnamon (cinnamon filling)
  • 1 tbsp stevia (frosting)
  • 2 tbsp cream cheese (frosting) 

Instructions:

  • Preheat the oven to 350°F.
  • Put mozzarella and cream cheese in a bowl.
  • Melt them into a microwave for 1 minute, stirring from time to time.
  • Add the egg into the cheese mixture and stir.
  • Add almond flour and baking powder. Mix well with a fork until a dough is created.
  • Make a ball of the dough.
  • Divide the dough into six balls.
  • Make long rolls and place them on a piece of baking paper.
  • Roll out the dough with a rolling pin, making each layer as thin as possible.
  •  Prepare the cinnamon filling by mixing stevia, water, and cinnamon in a small bowl.
  •  Spread the filling over the flattened dough rolls.
  •  Roll each into a bun and cut it from the side in half to make 12 buns.
  •  Place the buns on a non-stick baking sheet and bake for 25 minutes.
  •  While the rolls are baking, mix the stevia and the cream cheese to prepare the frosting.
  •  Spread over the warm rolls and serve.




PIZZA CHIPS

Ingredients:

  • 14 Pepperoni
  • 1/8 cup fresh grated parmesan
  • 1/4 cup shredded mozzarella
  • 1 tsp Italian seasoning
  • Marinara or ranch (optional)

 Instructions:

  • Preheat the oven to 400℉.
  • Absorb some of the excess oil off the pepperoni.
  • Place each pepperoni on a parchment-lined baking sheet or in the bottom of a muffin tin.
  • Sprinkle them with shredded mozzarella cheese, grated parmesan, and a pinch of Italian seasoning.
  • Bake for 8-10 minutes.
  • Let it cool until it becomes crispy.
  • Absorb the excess oil from the chips
  • Add marinara or ranch for dipping if you want.



CAJUN KETO CRACKERS

Ingredients

  • 1 cup Cheddar jack cheese
  • 1 cup Mozzarella cheese
  • 2 tbsp Cream cheese
  • 1 Egg
  • 3/4 cup Almond flour
  • Cajun seasoning

Instructions

  • Preheat the oven to 400 degrees.
  • Put cheddar jack, mozzarella, and cream cheese in a bowl.
  • Melt them in a microwave for 1 minute.
  • Take them out of the microwave and stir.
  • Add almond flour and stir until well mixed. If it becomes too stiff, return the bowl to the oven for 30 seconds to loosen up the mixture a bit.
  • Add Cajun seasoning according to taste and mix well.
  • Add 1 beaten egg and mix until it’s fully incorporated in the dough.
  • Make a ball of the dough and place it between two large sheets of waxed paper. Then, roll it out to flatten it into a sheet.
  • Cut the dough into around 72 cracker squares.
  • Take each cracker square off the wax paper, and put them on a lined baking sheet. Make sure there’s a bit of space between them.
  • Put them in the oven and bake for 5 minutes. Then, take them out, turn them over, and bake again for another 5 minutes.
