Breakfast: the most important meal of the day. However, when you’re running low on time it can be easy to say that you’re skipping it. With just one minute, I share how easy it is to have breakfast with a nutritious veggie egg breakfast bowl. Thank you American Egg Board for sponsoring this post.


Most people would admit that they tend to skip breakfast. We know that breakfast is important, and finding the time to prepare something nutritious doesn’t have to take too much of your time. My recipe I’ll be sharing with you today takes about one minute to prepare and another minute to cook. Now if you don’t have two minutes to spare for a quick and nutritious breakfast, then maybe you need to slow down just a tad. After a night of sleeping, your body needs to be replenished and that’s where breakfast comes in. So what are my three main reasons for not skipping breakfast?


1. Helps your energy levels

Research shows eating high-quality protein foods for breakfast, like eggs, can help you and your family feel more energized and satisfied throughout the day. Since breakfast generally means breaking your fast, having something to eat before starting your day can increase your energy levels. Just like you don’t expect your car to drive on empty, you shouldn’t run your body on empty. You have to admit that when you’re hungry, your energy levels just tanks.

2. Breakfast kick starts your metabolism

As if having energy wasn’t enough, having breakfast can help kick start your metabolism. You don’t even need to eat a big breakfast. An egg breakfast is quick and easy, especially on busy mornings. Simply beat an egg in a small bowl or coffee mug, place on high heat in the microwave for 60 seconds and add it to a toasted whole-grain English muffin. Top with low-fat cheese and a slice of tomato for a balanced meal. It’s a speedy and satisfying start to the day that takes less than two minutes to prepare.

3. Helps with weight

I know this works for me personally. I tend to overeat and snack consistently when I’m hungry. However, when I eat breakfast, I’m not as hungry, so my cravings are decreased.

While there are a myriad of reasons you should eat breakfast, those are my top 3. So how can you eat breakfast when you have very little time? That’s where my recipe comes in. Not only is it nutritious, but it takes very little time.


Veggie Egg Breakfast Bowl (serves 4)

What you’ll need.

Ingredients:



4 Large Eggs

2 tablespoons milk

Veggies of Choice

(for this I used diced tomatoes, sweet peppers, onions)

Shredded Cheese

Salt & Pepper to taste

Ramekins

Directions:

In a separate bowl, whisk your ingredients (eggs, milk, veggies, salt and pepper).

Place in a ramekin dish and microwave on high for 30 seconds then stir.

Microwave again for another 15-30 seconds until the egg is set.

Top with shredded cheese, serve and enjoy!
