Why Annual Check-Ups and Vaccines are Important for Your Teen ~ #Unity4TeenVax

As a mother of teenage sons, it's very important for me to keep them up to date on their vaccinations. Today with the help of Unity Consortium, I'm going to tell you why.

As a mother of four, you would think that I would be an expert in parenting, but au-contraire, if only! There are still mistakes made, because no-one is perfect, not even me. I seem to think that I did a really good job with my eldest, who is currently in college, but my boys (age 12 & 16) are truly another story altogether. My oldest son aged 16 was born prematurely, as were all of my children, and spent an additional week in the NICU due to RSV before I could take him home. What an emotional birth that was. Since then I have been very much on top of all his medical needs. At least that's what I thought, until one day I received a letter from the school stating that he was missing a very important vaccine. While I've been really good with getting all of my youngest, age 5, vaccines, I have to admit that I truly did forget that my son needed to be vaccinated at age 16, and it can be easily forgotten as they get older, but it shouldn't be.

It's not that my son's health isn't as important as my youngest, or that he didn't need to be protected. As they get older we tend to only to go the doctor when he's sick or need a physical for school. So if he's not sick and is in good health, why does he even need to be seen?

Here are two very important reasons why I should keep my kids up-to-date on their health care visits and vaccines, and why you should too.

1. Problems can be diagnosed before they become serious
I'm not a doctor and unless you are one, there are problems that you may not see or notice until your child is checked thoroughly by a qualified doctor. At each visit, your child's height and weight are taken and a significant increased or decreased weight gain can be cause for alarm. If your child's height is a concern, you will also know. If a minor problem is found, testing may be ordered in order to initiate treatment if needed.

2. Vaccinations can save their lives
As a former army medic, I know the value in vaccinations. Whenever we get deployed, we receive vaccines that can protect us from diseases that may not be found here in the US. While not everyone believes that they should vaccinate, having my own children vaccinated can protect them from diseases that can occur. I am of the belief that one ounce of prevention is a lot better than a pound of cure.

So why don't more parents vaccinate and get their pre-teens and teens seen annually?
  • Approximately 1 in 4 parents and teens believe that vaccines are more important for babies and not as important for teens
  • More than one-third of teens (34%) don't know how being vaccinated helps them
  • Four in 10 parents (41%) believe their teen should only see a doctor when he/she feels sick, reducing opportunities to discuss preventive health measures, such as vaccines
  • While most teens (92%) trust their doctor when seeking information about their health, nearly half of all teens (47%) agree they do not like talking to doctors or other healthcare providers.
So What Vaccinations are recommended for your Teen?

Between the ages of 11 and 12, and at age 16 these vaccinations are recommended.

  • Meningococcal-includes two distinct meningococcal disease vaccines (ACWY and B)
  • Tdap-tetanus, diphtheria, and pertussis (whooping cough) and Td Booster (tetanus and diphtheria)
  • HPV-human papillomavirus
  • Flu

Here are two very simple steps to make sure that your teen remains up to date on their annual check-ups and vaccinations:

1. Set a reminder alert for their next appointment to ensure that they don't miss a visit.

2. At your doctor's visit, discuss all concerns and the need for immunizations. You can make a list of all your questions so that you don't omit anything.

Tropical Breakfast Smoothie ~ #DairyPureMilk

Get your morning off to a good start by enjoying this tropical breakfast smoothie, made with DairyPure Lactose Free Milk.

Breakfast, the most important meal of the day, however, breakfast can occasionally be the one meal that we skip. I've been trying to do better when it comes to having breakfast. While I would make sure that the kids are fed, between getting them ready and out the door, it leaves little to no time for myself. As many of you know, my kids AND my husband all suffer from lactose allergy, while I personally do not. However, I hate heading to the supermarket to buy 2 different kinds of milk, so I would just drink whatever they drank. I am a big fan of whole milk, and please don't tell me that 2% is better for me. I don't like the taste and surprisingly, neither do my kids. So when I went into the supermarket recently and saw that DairyPure, a brand I already knew and loved had a whole milk that was lactose free, I knew I just had to give it a try.

I relish products that not only taste great, but ARE good for you. When you have a family, their health is something that you anguish about, which is why I love shopping at natural grocers. Foods that are organic, contains no artificial growth hormones and is just better for me and my family is my number one priority. With DairyPure Lactose Free Milk I have no worries. It is the only milk backed by an exclusive Five-Point Purity Promise. It contains no artificial growth hormones, is tested for antibiotics, and is continually quality tested to ensure purity. If that wasn't enough to make you say yes to purchasing it for yourself and your family, listen to this:- It tastes just like milk without the lactose so is much easier for them to digest, and you can't even tell the difference. I recall my husband and kids saying that I was lying because it tasted just like real milk.

But I digress! With mornings getting increasingly more difficult when it comes to having breakfast, I decided to make breakfast smoothies for the entire family, that not only tastes great but gives everyone the boost they need to jump start their morning. I named this my tropical breakfast smoothies since it contains mangoes and pineapples which are normally in the tropics. If you can't find mangoes where you live, you can substitute them for whatever fruits are in season.

Tropical Breakfast Smoothie (makes 3 servings)

What you'll need:

½ cup mango
½ cup pineapple
½ cup strawberries
½ cup peaches
2 cups DairyPure Lactose Free Milk
2 cups crushed ice
1 tablespoon honey

Tip: Freeze your fruits overnight.

Directions:

In a blender, combine your ingredients (mango, pineapple, strawberry, peaches, honey, and ice) and blend until smooth.

Pour into your favorite glass and enjoy!

Now you can enjoy Whole, Reduced Fat, Lowfat or Fat Free Lactose Free Milk just how you’d enjoy regular milk with DairyPure Lactose Free Milk! You can find DairyPure Lactose Free Milk in the dairy case at grocery stores nationwide.

Curried Deviled Eggs ~ #IncredibleBecause

Learn how eggs are not only the go-to breakfast food, but can be used for any meal. I've partnered with the American Egg Board to show you how.

Before I go into my recipe and why I love eggs, I want to share with you the American Egg Board You're Incredible Because… contest. This contest aims to inspire others to share why their kids, friends and classmates are incredible and calls for stories of incredible kids from all across the country in an effort to celebrate back to school. Entering the contest is as easy as submitting a photo or video to the Incredible Egg’s Facebook contest posts, or your own Twitter or Instagram along with a caption explaining why the kid in your life is incredible. Posts using the hashtags #IncredibleBecause and #Contest to be considered contest entries and are eligible for the grand prize and weekly prizes.

Now, I'm going to have to submit a photo of my very own princess not because she has DONE something incredible but due to the fact that she IS incredible. Don't let her photos on the blog intimidate you. She's almost always smiling, when not taking photos of course. Madison can brighten anyone's day and I sometimes tell others that I don't think she's my child. She's very friendly and outgoing and lightens up the room. Her vivacity is something to be admired and also one of the reasons why I love her so much.

Now why do I love eggs? If you're new here, I grew up in the Caribbean, on the beautiful island of St. Vincent and the Grenadines. My family was very self-sufficient. My parents planted their fruits and veggies and the only things we bought were of course the items that we couldn't make ourselves, such as rice and sugar etc. My dad kept a chicken coop in the backyard complete with hens and a rooster. Every morning I would wake up and we would get fresh eggs for our breakfast, however, those eggs would also be used to bake fresh bread and cakes. I had no idea at the time all the nutritional benefits that eggs gave to me, I just knew that it tasted delicious.

Fast forward to today. I'm now a mother with my own children ages 5 - 21, and we still eat eggs. While we don't have a chicken coop in our backyard, I pick up my eggs at my local supermarket, wholesale club or commissary, and I always make sure that I have them in stock in my refrigerator. Eggs are not only the go-to breakfast for my family, but they're also the perfect snack and a great addition to lunch or dinner on busy weekday nights. Research has also shown that eating high-quality protein foods for breakfast, like eggs, can help you and your family feel more energized and satisfied throughout the day.

Did you know?

  • Eggs are a nutritional powerhouse, with one large egg containing 6 grams of high-quality protein and nine essential amino acids, all for 70 calories.
  • Eggs are one of the few natural food sources of vitamin D, with one large egg providing 10 percent of your daily vitamin D needs.
  • Don’t toss the yolk! Yolks contain most of the egg’s nutrients like vitamin D, vitamin B12, selenium and more than 40 percent of the protein in an egg. The yolk also provides fat-soluble nutrients like vitamin D, E, A, choline and the carotenoids, lutein and zeaxanthin.
Now that my kids are back in school, snack time before meals and homework are important. My kids are just like me and love eating eggs as well. I love to infuse my Caribbean flavor into most of my dishes. I just love making curried everything and my curried deviled eggs recipe takes less than 30 minutes to make, is delicious and can also be used as an egg salad for sandwiches as well.

Curried Deviled Eggs

What you'll need:

6 large eggs
¾ tablespoon curry powder
¼ cup mayonnaise
1 ½ teaspoon fresh lemon juice
Salt and pepper to taste
Paprika for garnish
Finely chopped chives for garnish

Directions:

Step 1: Place eggs in a pot of cold water on high heat and bring to a boil for about 15 minutes. Once your eggs have boiled for the required amount of minutes, turn off your stove and let the pan stay on the burner for about 10 minutes. Remove, then place under cold running water. This is by far one of the easiest way to remove the eggs from the shell, perfectly.

Step 2: In a bowl, mix your mayonnaise, curry powder, lemon juice, salt and pepper together.

Step 3: Slice your eggs in half from tip to bottom and gently remove the yolks.

Step 4: Place your yolks in your mayonnaise and curry mixture. With a fork, smash the yolk until you have the texture you want. I personally don't like my yolks too smooth. Taste and season with additional salt and pepper if so desired.

Step 5: You can now scoop your mixture into your egg whites. I personally used a ziploc bag, and snipped the ends to enable me to pipe the mixture into the egg whites a lot easier.

Step 6: Refrigerate until you're ready to serve. You can then garnish with your paprika and chives.

Now that you have my delicious curried deviled eggs recipe, go out and make your own. Also, don't forget to enter the “You're Incredible Contest” with your own incredible kid!

Ways to Protect Your Kids From the Sun's Rays ~ #PlaySafeInTheSun

We're enjoying the last of summer, but for us here in Colorado at very high altitudes, it sometimes seems like it's summer all year round. How do I protect my kids from the sun's harmful rays? Together with La Roche-Posay, I will be sharing some tips with you.

We are truly enjoying the last days of summer. Summer for us in our family usually means, road trips, staycations and the water parks and pools. We love to try and stay as cool as possible. When we're not on the road, you can find us indoors under the air conditioning. It can get hot here in Colorado, but for us being at this high of an altitude, it can sometimes feel as though we're almost on "Planet Sun". When I mention that I'm not a fan of summer and it's heat, most people would ask "aren't you accustomed to the sun since you're originally from the Caribbean?", and I would say, "There is a difference between summers in the Caribbean and summers in North America". In the Caribbean you're on an island surrounded by the ocean and a tropical breeze. While it can get hot at times, it's very much bearable. Another reason I hate the summer sun is the fact that I do burn. Believe it or not African-American's do burn too! It's also one of the reasons that I keep a sunscreen in my bag for not just me, but for my children as well, especially my youngest. It's better to start their sunscreen protection NOW, rather than later. So what tips can I share to protect your kids from the sun's rays?

Here are 5 easy ways!

Always wear sunscreen
Whenever we go outdoors, before we hit up the water park or anywhere, be it summer, winter (yes you should be protected even in the winter), we always lather up on our sunscreen. I love looking for products that are high-quality, products that I can depend on, and have a proven track record. I sometimes get recommendations from friends and family, and sometimes it's just trial and error. One sunscreen that I've grown to love is La Roche-Posay Anthelios Dermo-Kids. This is a sunscreen that was developed with moms, dermatologists, and pediatricians, and is specifically made with powerful UVA/UVB filters that provide broad spectrum, 80-minute water resistant protection, highly protective ingredients and antioxidants that are effective, safe, and gentle on children’s sensitive skin. When it comes to my child, I want products that are not only gentle but effective and this does both jobs!

Wear a Hat
There's a reason they're called sunhat's. It's because they protect your head from the sun. While baseball caps are cute, "Go Yankees!", they don't really protect your little one's neck and ears as they should. For hats, I would say the bigger the better since the more protection, the better. If you do decide to wear a baseball cap, be sure to protect any skin that's exposed with sunscreen.

Wear Sunglasses
It's not just your body that needs protection, but so does your eyes. You may remember we just had an eclipse and were told not to look at the eclipse directly because it can damage your eyes. Unfortunately, that's not the only time that the sun's rays can damage your eyes. For children, wrap around sunglasses work the best since they block almost 100% of both UVA and UVB rays.

Wear protective clothing
Whenever possible, wear long sleeves and long pants since they offer the most protection, compared to shorter styles. Dark colors also offer a lot more protection than lighter clothing, however in the summer, we tend to stay away from dark colors. So what do you do in such a case? That's where my next step comes in.

Stay in the shade
Try and plan your activities for later in the day when the sun's rays is not at it's strongest. While you may be tempted to go out around midday, it's also when the sun's rays are strongest and most harmful. If you do decide to go to the pool, waterpark or even a day trip to the zoo, lather up with sunscreen and walk with an umbrella. Trust me, umbrella's are still cool! If you just can't help but be in the sun, the La Roche-Posay My UV Patch may be just what you need. It allows you to measure your UV exposure and the risk in real time via an app (available both on iOS and Android).

Remember to take your sunscreen with you so that you can reapply it as the day goes along, especially if your child will be in the water. Know that saying?:
Too much of a good thing is a bad thing
This rings true for the sun. While it's beneficial because it's a good source of Vitamin D, too much of it can actually hurt. Think sunburn. They're not only painful, but too much sun can also lead to skin cancer. Did you know suffering with one or more blistering sunburns in childhood or adolescence more than doubles your chances of developing melanoma? However, be sure to have on hand La Roche-Posay Cicaplast Baume B5 to help soothe their irritated skin. It's also a good moisturizer so always keep it in your bag. That's where I keep mine, because it's also great for adults too. It doesn't leave you greasy and has a rather pleasant smell.

So have an enjoyable rest of the summer, be smart and protect your children from the sun's harmful rays with La Roche-Posay.

You can find La Roche-Posay products at your local CVS, Amazon, or by using the store locator.

How to Have a Relaxing Morning ~ #ArtofEspresso

Mornings can get hectic, especially now that the kids are back in school. Learn how you can have a relaxing morning with the De'Longhi Latissima Pro.

With the kids back in school, there's usually a scramble in the morning to rush them out the door. No matter how much I organize and plan the night before, something almost always goes wrong. For example, my Junior High Schooler now takes the school bus, and I thought that would have made my life so much easier. Instead the school sent out a report that the bus will now pick them up 10 minutes earlier than the scheduled time because of a bus change. So now I have to get him up 10 minutes earlier so that he can be out the door 10 minutes earlier. For the past two days, however, I have ended up taking him to school because of course, he missed the bus. When my mornings start out that way, it's enough to make me tear my hair out, but I know I need to relax. No need to raise my blood pressure because of a missed bus. Luckily for me, I have a few ways that I relax when the kids are all gone.

Breakfast has always been the most important meal of the day for me. However, after I drop the kids off to school, I would generally rush into my local barista and pick me up a cup of espresso or cappuccino and something sweet to eat. Don't judge me, I have a sweet tooth. However, De'Longhi and their De'Longhi Lattisima Pro have made my life so much easier, because I can rush home and get my espresso or cappuccino fix right there in the comfort of my home. You read that correctly, it can make both! Best of all it is so easy to use. With all the different flavors capsules, all I need to do is to pair them up with whatever I feel like eating that day.

The De'Longhi Lattisima Pro is one beautiful machine. The aesthetics will fit in just about any kitchen. I know that it looks amazing in mine. I just love the sleek design and the simple one touch control panel. However, it's also really simple to use. Don't let it's look intimidate you. The 44oz water tank and the almost 17oz milk tank lets you brew as many beverages as you want before you need to refill the tanks, and it heats up so quickly that you can start preparing your espresso instantly with no time to waste.

To use, simply insert your flavored Nespresso capsule of choice and select your desired drink. It then does all the work for you. From frothing your milk to then adding the flavor, it's so simple. And clean-up is so efficient. The used capsule automatically drops into a capsule container when you're done, so all you have to do is insert a new one when you're ready to make another cup. My favorite flavor is Vanilio and I love pairing mine with scones in the morning. I can have mine at home barista espresso with just the right amount of froth, along with my freshly baked scones, and my morning is complete!

So how can you have a relaxing morning once the kids are in school? Here are five ways!

1. Prepare the night before
It's ok to prepare the night before when you want some time for yourself. Get your clothes ready for the next day and prep the kids lunches for back to school. The sooner you can get the kids out the door, the better it will be for you. I can't begin to tell you how much more relaxed I am when the kids are outside the house.

2. Have a relaxing shower or bath
Once the kids are gone, enjoy a cool, relaxing shower to perk you up, or if you really want to unwind, a nice bubble bath will also work wonders. Just sit back in the tub and let the bubbles soothe and calm you.

3. Turn off all distractions
Turn off the televisions, the radios and even your cell phone for a moment. Trust me, the world won't disintegrate into pieces if you just tune out everything for a while. Forgot about social media! Believe it or not, social media can sometimes stress you out even more than your own kids. It can be tough seeing all the near perfect social media moms with their near perfect houses and kids, while knowing that yours is a complete mess.

4. Have breakfast
Don't forget breakfast. Breakfast is the most important meal of the day and a nice cup of coffee with something to pair it with always works wonders. Don't rush your breakfast, instead take time to savor it. I love to relish every drop of my espresso whenever

5. Grab something to read
Find a quiet spot and read something light, it can be a novel or your favorite magazine. If reading isn't your thing, then simply make yourself at home and don't worry about anything.  Sit back and loosen up. Focus on your breathing and let yourself go. It's going to be alright!

If you're like me and find yourself at your local barista more than you would like, pick up a De'Longhi Lattisima Pro machine. I just know that you're going to love it as much as I do.

How To Raise Awareness For SMA ~ #CureSMA #HeartsForEzra

Did you know that August is National Spinal Muscular Atrophy (SMA) Awareness Month? Together with Counsyl, I want to share how you can bring awareness to this disease.

As a mother four times over, one of my deepest fears has been losing a child. As parents, we would love to see them grow up, get married and have children of their own. If you are unfamiliar with SMA, it is the leading genetic cause of death for infants under the age of two right here in the USA. SMA robs you of your physical strength by affecting the motor nerve cells in the spinal cord, takes away your ability to walk, eat or breathe and eventually causes death. Take Emily and Ethan Bessey, who lost their baby to SMA in 2013 and are now raising awareness of the disease through their Hearts for Ezra Foundation. Listen to their heartbreaking story below.

As someone who has gone through all high risk pregnancies, I was tested for almost everything under the sun including Down Syndrome. I went through genetic counseling but was never once offered carrier screening for SMA. While I was lucky that none of my children were born with SMA, the condition is much more common than one might think. In fact, 1 in 50 Americans are carriers of SMA, regardless of ethnicity or standard of living. That's a very high statistic! If you are pregnant, ask your doctor for carrier screening for SMA.

Counsyl, a DNA testing and genetic counseling company, offers the Foresight™ Carrier Screen to help detect if you and your partner are carriers for serious genetic conditions like SMA before getting pregnant. In the event that you are both carriers, there is a 1 in 4 chance that your baby will have the disease. Knowing before you get pregnant or even early on in your pregnancy can make all the difference. You'll have time to talk to your healthcare provider to consider your options, and to make the decisions that are right for you and your family.

So, how can you help raise awareness for SMA? Here are three easy ways.

Spread the word on social media
We all have influence whether you want to believe it or not. By using the #CureSMA hashtag on social media you'll bring awareness to a disease that many may not know of. Go ahead, share a tweet or Facebook post and get your friends and family involved.

Have a fundraiser
There seems to always be a fundraiser for everything. How many times a year do you get a fundraising form from your child's school asking to raise money for a "noble" cause? Well, this is a noble cause. Having a fundraising event can help raise both awareness and donations to your cause, and there's no shortage of ways you can go about doing so. From a bake sale to a walk, get creative.

Volunteer at your local Cure SMA Chapter
There are currently 34 volunteer led chapters around the US. The chapters provide support to families affected by SMA. Volunteering is a great way to bring awareness and support to those in need.

Want to get involved? You can make a tax deductible donation to Hearts for Ezra Foundation, which will help raise awareness and fight for a cure for SMA.

The Five Must Have Electronic Devices for College

It's that time of the year again when summer winds down and the back-to-school season begins. Soon, Bed, Bath and Beyond, and Target stores all over the country will be flooding with college goers as they hustle for the best deals in town, especially in technology.

With so many things to buy, however, students often find it hard to distinguish between what they need and what they want. The situation is made more intricate by the numerous "welcome to college" sales held by retailers, which tempt students and their parents to stock up on promotion items than other would-be essentials.

For collegians, therefore, it pays to have a well-drawn-out shopping list. The right tech will help you do research, draft assignments, keep organized, stay fit, and decompress after a long day on campus.

Are you going off to college soon? Here are five gadgets you just can't overlook.

1. LAPTOP

In today's overly technological world, a decent college laptop is as vital to a student as a pen and paper. In addition to getting school work done faster and more efficiently, notebooks offer access to a vast pool of educational resources and useful information.

A college-friendly laptop will give you the convenience of taking your work with you and completing assignments anywhere and anytime. Keeping up with lectures will also be easier when you have the option of firing up the microphone and recording, rather than taking notes by hand. Moreover, professors usually make their digital notes available to students, and electronic textbooks are significantly cheaper than hard copies.

That said, although prices have considerably dropped in recent years, a laptop will probably be the most expensive item you buy. Thankfully, colleges have come up with new ways of making them more accessible to students. Some require that computers meet the minimum speed, power, storage, and connectivity specifications, while others partner with manufacturers to offer students exclusive deals for laptops that are specially configured for college.

Before buying, therefore, get in touch with your school and find out about any guidelines they may have.

2. FITNESS TRACKER

In college, it's easy to get strung up with a tight schedule and not have time to keep fit. From long days of lectures to sleepless nights of research, you may lack the motivation for a skipping rope session or a casual evening jog.

A proper fitness tracker will keep you on track with your health by giving you a clear view of calories, heart rate, daily steps, distance covered, stairs climbed, and hours jogged. Most also come with calendar alerts, reminders, and email notifications and are therefore an excellent way to stay on top of your daily agenda.

Companies like Misfit and Fitbit have pleasant selections of trackers, which range from simple wristbands to sophisticated smartwatches. While the tracker you choose will depend on your needs and your budget, it's best to pick one that's subtle to go with any of your daily outfits, comfortable for all day and all night wearing, and waterproof so you wouldn't have to take it off for a swim or a shower.

3. NOISE CANCELING WIRELESS HEADPHONES

You won't always have access to your own space while on campus. A good pair of noise-canceling headphones will go a long way to making your life easier, be it by drowning ambient noise for quiet studying, listening to audiobooks and notes, or uplifting your spirit with some music. Going wireless will also help you to move around without the bother of clumsy wires hanging from your ears.

Some great brands to keep an eye on are Beats, Bose, Audio-Technica, and Sennheiser. Headphones vary widely in quality, and the average price for wireless, noise-canceling ones is $50 to $300. Regardless of your budget, ensure you pick the pair that sounds acceptably good, feels comfortable, and seems durable enough to last at least the first year.

4. EXTERNAL STORAGE

Having your essential data somewhere else besides your computer can be a lifesaver. A portable hard drive will help you keep a backup of your files and documents, which you can easily access when you accidentally knock a glass of water over your keyboard, or your roommate unintentionally infects your laptop with their malware-riddled flash disk.

A sizeable hard drive will also keep your computer fast and light, by reducing the slowdowns that come with having too many files onboard. And because many drives can be password protected, they can come in handy when you can't keep your friends off your laptop.

If a hard drive is out of your budget and you won't mind the limited storage, a 32GB flash disk may be worth your while. Alternatively, because your college will likely have wireless internet connection all over campus, you could consider signing up for a cloud storage service like Google Drive or OneDrive.

5. PORTABLE CHARGER

College students are always on the go, and so are their gadgets. Sure, you may form the habit of having everything charged before you set off for a class in the morning, but adhering to such a routine will not be easy. A portable charger will keep your devices charged at all times, so you don't need to worry about power issues while in the middle of a study session. There is nothing more frustrating than the dreaded mac battery drain while in a lecture, and your brain is feeling too fuzzy to try and memorize every single fact. A pen and paper is always a handy backup, but they are nowhere near as useful as your laptop or smartphone.

The best charger is that which will work with a variety of gadgets, including your laptop, smartphone, tablet, and even your fitness tracker. It must also be light enough to ferry around in your backpack all day.

Summary

College is undoubtedly exciting, but without the right tools for the job, it could quickly morph into an unpleasant experience. Although your favorite retailer may have gadgets that seem more fun and more urgent, the devices above should be the first to go into your shopping cart.

Quick and Easy Shredded Pork Tacos ~ #RealFlavorRealFast

Tuesday is Taco Tuesday's at our house. Learn how to make this delicious shredded pork tacos for dinner with Smithfield® Marinated Pork.

School is officially back in session and has been for our kids here in Colorado for the past two weeks. With driving the kids to and from school, helping with homework and doing all the other chores in-between, there really isn't much time left for myself. I also have to think about dinner and what I can do that's quick, doesn't take up too much of my time, and in turn leaves me with some time to really enjoy with the kids before it's time for bed. Tacos have always been a favorite of mine and as I mentioned, Tuesday's generally taco night for us. With my list in hand, I decided to head to my local commissary to get my ingredients.

As a retired military veteran, I love beating the rush and taking advantage of the early bird shopping. It's generally when most of the soldiers are at home after an early morning of PT and their wives or husbands are taking their kids to school, or are at work. I just love having the store to myself and taking my time through the aisles whilst looking for what I need without having to say "excuse me".

My husband has been saying that we needed to change up our recipes and do "something different" every once in a while. So instead of the regular beef or chicken tacos, I decided that we were going to use pork instead. However, I had no idea what to expect in the pork department, and was I surprised. There sitting on the shelf were a variety of Smithfield brand marinated fresh pork, already prepped so my prep time is done for me. How much easier does it get than that? I couldn't believe my eyes and my good luck. There was definitely going to be a change, and it was going to be shredded pork taco night!

Excuse my wrinkled shirt - ain't nobody got time to look cute after dropping the kids off to school then heading to the supermarket.

With all the different flavors across Tenderloins, Loin Filets and Sirloins, how could I even begin to choose. Then right there in-front of me, I saw it! It was the Smithfield Slow Smoked Mesquite Flavor Marinated Pork Tenderloin, made from 100% fresh pork and packed with protein, I knew I had to have it. It was what we were going to have for dinner. So I grabbed three packages. I wanted to grab them all but I had to leave a few for the other shoppers. Don't be greedy AnnMarie! I made it home, took it out the package, and the aroma was unbelievable. I placed it in my instant-pot and let it slow cook until it was time for dinner. I wanted it hot and steaming and while I wanted it then and there, I had to wait until dinner time.

This dinner will literally take you less than 30 minutes to make!

Shredded Pork Tacos

What You'll Need
Smithfield Slow Smoked Mesquite Flavor Marinated Pork Tenderloin (or preferred flavor)
Taco Shells or Tortillas
Taco Seasoning

Toppings
1 Medium Tomato Diced
1 Finely Chopped Onion
½ Jalapeño Pepper Finely Chopped
2 Sprigs of Finely Chopped Cilantro
Shredded Lettuce
Shredded Cheese
Sour Cream
Taco Sauce

Equipment Needed
Instant Pot or Slow Cooker

Step 1: Place your Smithfield Marinated Pork along with your taco seasoning in your instant pot or slow cooker, and cook according to directions on your cooker. You can prepare this in advance so when dinner time is near it will be finished.

Step 2: Once your pork is finished, remove from your cooker and shred with two forks or your fingers.

Step 3: Fill your taco shells with your shredded meat and your desired toppings.

(You can store leftover shredded pork for another meal, the possibilities are endless.)

Now my family thinks I'm even more awesome, if only they knew that Smithfield was the real reason behind my amazing tacos. They even declared that my shredded tacos were the bomb and insists that I make them again. All in all, our Tuesday Taco night just got revamped. I got my meal done in less than 30 minutes and they got to spend more quality time with me. Doesn't get any better than that!
