3 Reasons You Might Need a Tutor - #LearnWithWyzant

My kids are all back in school and I'm sure so are yours. Whether you homeschool or not, it's just that time of the year. I'm going to be honest with you. I graduated from college over 20 years ago. If homework that once used to take an hour, now takes 3 hours, it might be time to worry. A child who may also start hating school because to them, they may feel like a failure because they "just can't do it".

Get Your Flu Shot This Year at CVS Pharmacy - #TheCVSDifference


As you know, I'm a big advocate for getting the flu shot. As a former army medic, it was my job to make sure that my unit was vaccinated yearly and I also made sure that my own kids got the vaccination as well. Cajun Sausage Mac n Cheese featuring Klement's Garlic Summer Sausage

School is officially back in session for everyone! Can you believe it? It seems like just yesterday we were having our summer vacation and planning road trips. Now I'm planning meals and helping out with homework. As most of you know, I lost my mother just over a year ago and one of the things that I remember most about her, was her love of cooking. She would have breakfast, lunch and dinner on the table and I would wonder where she ever found the time to do it all. I can barely get breakfast done and by the time that I finish breakfast, I'm almost done for the day. When you get home, you don't want to spend all day slaving on a stove, sometimes you want something quick and easy and of course nutritious AND delicious.


One such meal I love making is my mom's favorite mac n cheese. I remember sitting around the table with my family eating and sharing in the joys of family. We would laugh and talk and even to this day I remember all the fun we had. In the Caribbean food brings family together. I am still not the cook that she was and I remember calling her to get her recipes, so I can incorporate them into our own meals. Recipes that I plan on handing down to my own kids. I decided that I would make her mac n cheese and give it a new twist.


As I mentioned, school is back in session and I would prefer not to be at a stove for hours on end trying to make a meal that is delicious and nutritious for my family. Having some sausage on hand from the Klement's Sausage Company I decided to make my mom's mac n cheese which doesn't take very long to prepare, and add some of the Klement's Garlic Summer Sausage that I had on hand. Klement’s Summer Sausage has an authentic European handcrafted taste that is delicious year round so don't feel like you have to only eat it in the summer. I can however tell you that the kids just loved it. If you've never heard of Klement's before, let me tell you a bit about them and if you can find them, I recommend giving them a try. At least you're going to need to if you intend on making my recipe.

Now on to my Cajun Sausage Mac n Cheese.


Ingredients:
1  package of garlic summer sausage, cut into ½-inch slices
1 cup chopped red bell pepper
1 cup chopped green bell pepper
1 cup of chopped red onion
⅓ cup all-purpose flour
2 tbsp Cajun seasoning
1 qt whole milk
16 oz shredded mozzarella cheese
3 cups shredded mild Cheddar cheese
1 16oz package elbow pasta, cooked and kept warm


Instructions:

In a large skillet, cook sausage over medium heat until lightly browned, about 2 minutes.

Add red and green bell pepper to your sausage.

Sprinkle your peppers and sausage with flour and Cajun seasoning cook for 2 minutes until tender.

Slowly begin to add your milk, and cook, stirring until thickened.

Reduce heat to low, add cheeses stirring constantly, until cheese is melted.

Add cooked pasta, combine with your cheese sauce.

Serve immediately and enjoy.


I can tell you that after a long day at school my kids thoroughly enjoy this meal and they'd be the first to tell you that it tasted great before, but now it tastes even better, actually better than better with Klement's sausage.

My Life is Just as Busy as Yours - #LALAforLife


Since I've retired from the military I've been asked these two questions over and over again, "what do you do at home all day?", and "do you miss the army?". I'm going to answer these two questions in this post, with me answering the latter first. Yes, I miss the army, I miss the structure and believe it or not, I sometimes miss getting up at 0430 in the morning and getting ready for PT (physical training) as early as 0630 or sometimes even earlier. Now for my second answer, and I get this question mostly from mom's who work outside the home, because they just don't get it. Do you really want to know what I do all day? I do A LOT and to be honest, my life is just as busy as yours!

Cast Iron Skillet Chicken Picatta


Are you looking for something different for dinner, how about our Cast Iron Skillet Chicken Picatta? Lately I've been seeing quite a lot of cast iron skillet recipes and to be honest I have never thought of owning a cast iron skillet before. Last year we purchased a new home and with that new home we decided to upgrade our kitchen cookware. I've always been a fan of non-stick pans so after reading tons of reviews, I finally decided on the Rachael Ray Hard Anodized II Nonstick Dishwasher Safe Cookware. I had seen them being used before and I LOVED the ease with which they cleaned up, and I also loved their bright orange handles. I can tell you that they're actually one of my favorite pots and pans to use and I'm a previous owner of Calphalon. However, I'm a big fan of shopping at IKEA and recently I went there to buy a few things (I have no idea what because I'm always there), and they had 2 cast iron items in their as-is section. If you've never checked out their as-is department, you need to. These were marked at over 50% off and I just had to have them. Now the benefits of using a cast iron pan is that you need less oil and you also get the added bonus of having that extra iron transfer into your food, so it's a win win. I'm now using my cast iron skillet a whole lot more and I suggest you picking up one to have in your cooking arsenal. Now on to my recipe

Cast Iron Skillet Chicken Picatta

Ingredients:

4 boneless, skinless chicken breasts, pounded to 3/4 - 1" thickness
salt and pepper to taste
2 tbsp. of lemon seasoning
4 Tbsp olive oil
5 cups of fresh spinach
1/4 cup of caramelized garlic
1/2 cup chicken broth
3 large lemons juiced
1 cup heavy cream
¼ cup capers, drained
Fresh parsley
1 lb angel hair pasta


Directions:

Heat olive oil in a skillet over medium high heat.

Season your chicken breast with a lemon seasoning evenly on all sides.

Place the chicken breasts in the skillet.

Cook for about 4 minutes on each side make sure the chicken is cooked through.


Remove chicken and place on a plate and set aside.

Repeat with remaining chicken breasts.

Drop your pasta in salted boiling water (according to package directions)

Reduce the pasta water heat to medium low.

In your cast iron add garlic, and spinach to the same skillet, stir to sauté for 1 minute.


Add chicken stock, lemon juice, heavy cream, and capers.

Bring the sauce to a low boil.

Simmer the sauce up to four minutes.

Drain pasta.

Add your pasta to your cast-iron and toss all ingredients.

Slice the chicken into strips and place over cooked pasta.

Garnish with parsley.


Eat and enjoy!

5 Easy Ways to Welcome Fall - #FallReset

Fall is almost here, it officially begins on September 22nd, but for us the leaves are already changing colors and the weather has begun cooling down. I'm big on fall, I love the cooler temperatures, and everything that is associated with fall and the fall season. I love putting up my fall decor and as you can see, we've already started with the outdoors. However, the one thing I'm not a fan of is cleaning. No matter what time of the year it is, I hate cleaning. With that being said, there are a few things that I always make sure to do whenever fall arrives, and today I want to share with you 5 easy ways that you too can welcome fall.


1. Bring out the Fall Decor

Say goodbye to summer by putting away the bright summer colors, and make way for the darker hues of oranges and browns that autumn brings. I'm a big fan of decorating and my entryway table always announce what season we're in. You can get your decor from a department store, craft store or even your local dollar store. Decor is usually available as early as August so don't procrastinate. If you're crafty enough, you can even make your own by bringing nature indoors. Add a few leaves and acorns to a jar like we did to give your home an autumn element.



2. Get Your Winter Clothes and Linen From Storage

Pack up your lighter summer clothes and replace them with your warmer clothes for the season. Now is also the time to see what will make it for next season. If you've gained a few pounds and your clothing no longer fits, think of donating, recycling, selling or even giving them away to make space for other things. Also swap out your lighter linen for heavier, thicker, warmer blankets or duvets.


3. Bring out the Scents

Fall for me is all about cooking and baking in the kitchen. It's about pumpkin spice and the great outdoors. So find some of your favorite scents and light a candle or two or even melt a few waxes. 6 Ways to Give Your Room More Light

Let's face it. Sitting in a dark room really puts a damper on your day. Sunshine charges us with Vitamin D and optimism. The amount of ambient light in the room can have a dramatic effect on how you see things — both figurative and literally. Here are 6 ways to lighten up the dimmest interior.


1. Choose Airy Window Treatments
The type of window treatment you choose can greatly alter the mood of your interior space. Assuming that your room has windows, you want to avoid using heavy drapes or curtains that shut out light. Instead, you can consider neutral-colored and lightweight blinds, semi-sheer shades or roller shades to liven up the room with a touch of energy and light.

2. Add a Skylight or TDD
Installing a skylight can dramatically open up a room, flooding it with warm natural light. You will be able to bathe in the warmth of the sun during the day and soak in the silvery starlight during the night. If a skylight is not exactly suitable for your home, you can use Tubular Daylighting Devices (TDDs) as a creative alternative.

3. Repaint the Room
It's amazing what you can do with a dab of paint. Light, neutral colors can open up the room and reflect light. When choosing the right color for your room, Interior Designer Edith Gregson shares that “flat, matte or satin finishes will soak up light, while semi-gloss, high-gloss and lacquer finishes tend to reflect light, which make a darker room feel brighter and lighter.” On the other hand, if you happen to have a low ceiling and want to breathe a generous atmosphere into the room, painting the walls and moldings with the same color will definitely add the impression of height and depth.


4. Add a Mirror or Three
Mirrors can be an affordable and effective way to brighten a dark room. Floor-to-ceiling mirror tiles, for example, can make an especially big impact in a small room with its ambient illumination. Table mirrors, wall mirrors or standing mirrors can also work well if you position them to reflect from the brightest source of light in the room. Additionally, placing two mirrors opposite of each other can also make the room appear larger, while increasing the complexion of the space.

5. Be Creative with Lamps and Lights
Hanging pendant lamps can add warmth to a seemingly small and dark space. Apartment Therapy suggests hanging lamps at different heights to create a layered light effect. Generally, choosing lamps of different sizes and textures will give the room a more interesting visual presentation. You may also experiment with wall, floor and table lamps to create an attractive interplay of light.

6. Play with Recessed Lighting
