Semi-Homemade Peach Cheesecake Ice Cream‏

You may have wondered where we've been for the past week. We haven't forsaken the blogging world but getting on with life took precedence. That means that some posts that were supposed to be taken care of didn't get done and I even missed another commitment with one of my favorite bloggers. Tamara we'll make it up to you, we promise! Many of you may have known that this year has seen a lot of changes not just here on Growing Up Madison, but also in my personal life. This past week I closed on a brand new home which meant that we were busy packing and moving. We're still transitioning in our new home but so far everyone seems to love it. I'm an early riser and a late sleeper but this move has totally got everyone tired. When you're running low on energy sometimes you need a nice pick me up and this is where today's treat comes in. While we love store bought ice-cream, there's nothing like getting in the kitchen and mixing up your own sweet mix. Our semi-homemade peach cheesecake ice-cream is sure to hit the spot with your family members, especially the kids.


Here is what you'll need:

Ingredients

24-ounces vanilla ice cream (half of a standard size container)
1/4 cup vanilla yogurt
1/3 block of cream cheese, softened (appx. 2.67 ounces)
2 cups fresh peaches (about 8 small peaches)


Directions

Peel and roughly chop peaches. To easily peel them, dip them into boiling water for about 30 seconds and then plunge them right down into cold water. The skins should peel right off.


Add the yogurt and cream cheese to a food processor with a dough hook (not the sharp cutting knife) and blend until well incorporated.

Add the ice cream and peaches and blend until everything is mixed well and the peaches are mostly broken down.

Taste and add sweetener, if needed.


Pour into a freezer-safe container and freeze until firm.

To serve, allow the ice cream to sit on the counter for 10-15 minutes before scooping.


Notes: The tanginess of the yogurt and cream cheese are what give this the a classic cheesecake flavor. You could certainly omit them to make just a fresh peach ice cream. Greek yogurt would also be good.
