Green Coconut Smoothie‏ #Recipe

I’m not a morning person, although I’ve been getting up as early as 4am even though I’m retired and no longer have to. It’s a habit I learned while being in the US Army and some habits are hard to break. One of those habits is not having breakfast or sometimes lunch during the day. For those who don’t like having breakfast in the morning, even though it’s the most important meal, smoothies are a great alternative. I love having them as often as I can, and you’ll be surprised to know that you can add not only fruits but veggies as well. It’s a great way to get your daily fruit and veggie requirement for the day but please don’t use it as a daily substitute. Last week I shared our Creamy Tropical Smoothie which we made with tropical fruits. Today I want to share with you our green coconut smoothie. Don’t let the green in the name fool you, this is absolutely delicious and you’ll wonder why you never made it before now. Not only will you enjoy it but I can guarantee that the kids will too.


Makes two 9-ounce smoothies

Here is what you’ll need:


Ingredients

3 cups fresh spinach leaves

3/4 cup coconut milk (I used light)

1 banana, frozen and sliced

1/2 cup plain Greek yogurt

1/4 water or coconut water (more if needed)

Sweetener of your choice, if desired


Instructions

1. Add all the ingredients to a blender and blend until smooth and frothy.

2. Taste and add sweetener, if desired. Add more liquid, if needed. Blend again.

3. Serve immediately or store, covered in the refrigerator for up to 24 hours. Shake well before serving.


Notes:

If you like a thicker/colder smoothie, you can add some ice when you blend it. And if you like it thinner, just add more liquid.

As we mentioned before, don’t let the green fool you. It’s amazing how you can hardly detect the taste of spinach in a smoothie. If you have kids who aren’t fans of spinach, this is a great way to introduce it to them. They won’t even realize what they’re drinking and you don’t have to tell them, they’ll only know that they’re drinking something truly delicious and good for them.
