Blue Cheese & Bacon Deviled Eggs


We have really been on a blue cheese and bacon kick. I just love blue cheese and it's not just good for buffalo wings, I tend to use it in a lot of things. You can even check out our blue cheese and bacon cheese ball which I swear is absolutely delicious. However if you're still looking for an appetizer how about this blue cheese and bacon deviled eggs. Not only is deviled eggs super easy to make and delicious but they are usually the first thing to go at parties. They are great finger foods and even kids love them.

Here is what you'll need:



Ingredients

6 large hard-boiled eggs, peeled
4 tablespoons cooked, crumbled bacon
4 tablespoons crumbled blue cheese
4 - 5 tablespoons mayonnaise
1 green onion, finely sliced
1 teaspoon spicy mustard


Instructions

Finely chop 2 tablespoons of the bacon, leaving the rest in larger pieces for garnish.

Carefully peel each egg and slice it in half. To keep the edges of the eggs clean, wipe the knife off after cutting each one.


Remove the yolk and place it in a small food processor along with the mayonnaise, mustard, 2 tablespoons of the blue cheese, the chopped bacon, and half of the green onions. Blend until smooth.

Taste and adjust any of the ingredients you want to suit your tastes.


To serve, arrange the eggs on a serving platter, sprinkle the remaining green onions and blue cheese all around and on top of the egg. Then place one piece of the reserved bacon into the top of each egg.

Enjoy!


Notes:

Because of the bacon, the filling will not be completely smooth in this recipe. If you like a completely smooth filling, you could just use the bacon as garnish.

When you're picking out the bacon for the garnish, look for the pieces that are a little larger in size, which just look prettier on top of the eggs.

To fill the eggs a little easier, add the filling to a Ziploc bag, cut the end off of one corner and squeeze it into the egg.

Bacon and blue cheese are both very salty, so I didn't add (or need) any salt in this.

To cook the hard-boiled eggs, add them to a pot and cover with cold water by at least two inches. Bring to a full rolling boil for one minute, turn the heat down to low, cover and let sit for 13 minutes. Drain the eggs and fill the pot with cold water. Immediately drain them again and shake the eggs around in the empty pot to gently crack the shells. Fill the pot up with cold water and let them sit for five minutes before peeling.

Blue Cheese & Bacon Cheese Ball


In just a few hours it will be 2016 and if you're like me you like to bring in the new year with a bang celebrating with family and friends. Celebrating also means time for appetizers and drinks. How about something that will not only delight your palate but will be great for game day as well. Try our Blue Cheese and Bacon Cheese Ball because everything is always better with bacon.

Here is what you'll need:


Ingredients

8 ounces cream cheese, at room temperature
3/4 cup Italian blend cheese, shredded
2 tablespoons crumbled blue cheese
1/4 cup cooked, crumbled bacon
1/2 cup slivered almonds, toasted
1 tablespoon green onions, finely sliced
2 tablespoons green peppers, finely chopped
1 tablespoon Italian parsley, finely chopped
Few dashes of your favorite hot sauce


Instructions


Add the cream cheese, Italian blend cheese, blue cheese, green onions, green pepper, and hot sauce to the bowl of a stand mixer. 

Finely chop about a tablespoon of the bacon and a teaspoon of the parsley and set them aside. Both of these will be used in the coating on the outside of the cheese ball.


Add the remaining bacon and parsley to the food processor.

Turn the mixer on low until all the ingredients are incorporated, and then turn it up to medium and let it whip for about 60 seconds. 

Transfer the cheese ball onto a plate using your spatula to form into a ball. It won't be a perfect ball at this point, and that's OK. 


Place the cheese ball in the freezer for about 10 minutes to firm up. 

While the cheese ball is chilling, add the almonds, reserved bacon and parsley to a plate and mix to combine.  


Remove the cheese ball from the freezer and place it on the plate with the coating.

Carefully press the coating into the cheese ball. Most of it is going to fall back onto the plate, which is normal. Just keep pressing the coating into the cheese until it's completely coated. As you do this you can also form the cheese ball into whatever shape you like. 


Sprinkle the remaining coating onto your serving platter and place a cheese ball right on top. 

Serve with chips or crackers.

Notes:

Cheeseballs are the perfect snack for any party or get-together...and so easy to make. 

This cheese ball is packed full of both flavor and texture! The blue cheese and bacon make this extra savory, while the green pepper, parsley, and green onions add a pop of crunch and freshness! 

To toast your almonds, add them to a small pan over medium-high heat. Continue tossing them around the pan until you can start to smell them. Immediately remove them and put them on a plate to cool. Be sure to watch this closely, as they can burn in a matter of seconds. When the almonds are cool, finely chop them and set them aside. 

The hot sauce is optional, but gives it a nice little kick. 

Blue cheese has a very strong flavor, so we only used 2 tablespoons. If you really love it, feel free to add more!

To really bring out the bacon flavor, we finely chopped a little to use in the coating. And the parsley just gives it a little bit of pretty color on the outside.

You need a little shredded cheese in most cheese ball recipes to help hold it together. We wanted to go with a mild flavored cheese so that it wouldn't overpower the blue cheese and the bacon. Mozzarella is a little too mild, so we found that using an Italian blend was perfect. That said, you could really use whatever you want as long as it's not too strong of a flavor.

Make it a Juicy Juice Christmas with Juicy Juice Apple Cider


The holidays are very quickly approaching. Christmas will be here in less than a week. My Christmas menu is planned and the kitchen will be filled with smells of marvelous food very shortly. I love to involve my kids in the planning and preparing of the family meal. After all they are part of the family so I always include them. They all have their part to play in the Christmas celebration. Whether it's helping to set the table or handing ingredients, there's a part for everyone. White Chocolate Peppermint Popcorn


I have been in the kitchen all weekend long preparing delicious snacks with my little girl Madison. She loves sweets and you may have heard me mention that I just absolutely hate giving out candy. I buy organic lollipops but even those are given sparingly. However with all the candy canes that I bought to go on the tree for decoration purposes, have been secretly disappearing. No secret as to who has been taking them. I finally decided that there was an easier way to give her something sweet and I can also enjoy it as well. We just love popcorn and the more flavorful the better. While caramel has to be my favorite since this is the Christmas season, I decided that we'll make a White Chocolate Peppermint Popcorn and I'm so happy I did, because it was delicious. Up and Away Jackets for Everyone!



I am of the firm belief of empowering females and with daughters I encourage them to do whatever they can. I support their dreams and have told them over and over, that they can do anything they put their mind to. My 3 year old loves everything her bigger sister and brothers do and have even wanted to wear their clothing. There is absolutely nothing wrong with a girl wearing boy clothing. As a matter of fact, while I was growing up I had no sisters, I however had 2 older brothers and I would sometimes steal their tees so I can have oversized shirts. Even as an adult you may sometimes find me walking around the house in my still oversized tees. Nothing wrong with that at all. My boys have worn pink because to me it's just a color. Whoever came up with blue is for boys and pink is for girls didn't know what they were doing. My daughter can wear anything she wants to! So when Up and Away Jackets once again asked us to feature their jackets we decided to do something different.

Peppermint Brownie Bark


When you think of the holidays you think of peppermint and whenever I think of peppermint I think of candy canes. While I love using them to decorate my Christmas tree there are lots of other uses for those delicious candy canes. Here is just one way that we have decided to use them. May The Force Be With You - Star Wars by Stride Rite


The Star Wars frenzy has begun and most people will be going to the movie theaters to see the movie. While I have seen all the movies, I am really interested in seeing this new one. Now if anyone wants to get me anything for Christmas, here's a hint, I would love to have the entire collection. If you're one of those parents who said "my kids would never wear character shoes", trust me I've been there. I was one of those parents, but that has changed in the past year ever since my daughter found out that not only can she see the movie, but she can also get the clothing and the shoes too. We also loved the Star Wars fight scene going on on the toe of the shoe. As with 90% of her shoes these don't involve laces. Madison still has no idea how to tie them so I like getting her shoes that nurtures her independence. They are easy to go on and off and includes a velcro closure to secure them together.

Blueberry Bread with Cinnamon Vanilla Glaze


Even though I've shared numerous recipes on the blog, I think this is one of the toughest I've ever had to write. It will be my very first Christmas without having my mother. I can technically call myself an orphan now since I've now lost both parents. Christmas will be here very soon and that means there will be lots of cooking and baking happening in my household. I love cooking and I chalk up to my Caribbean upbringing. My mother would cook all three meals for us daily. I'm not sure how she did it but she was up at the crack of dawn and breakfast was done before I was even out of bed. By the time I was eating breakfast, lunch was being done and then dinner was always done way before 6pm. Every Christmas there would be lots of cakes, fruit cakes, rum cakes and the occasional sweet breads. I don't think I will ever be as good a cook as my mom but I do try. Bake Perfect Recipes with Perfect Bake


I love baking and every weekend you can find me in the kitchen baking up a storm. Whether it's cookies or cakes there is something being done. My oldest daughter is just the same and I have a 3 year old who is addicted to cupcakes and cookies, so there would always be boxed mixes in my pantry. Quite unlike my mother though who can bake a perfect recipe from scratch, I cannot. I have to follow a recipe and even sometimes those recipes don't turn out quite as well as I want them to. I have had the average Pinterest fails like most people, you know the ones that turn out looking nothing like the recipe, no matter how good they might taste. Why We Won't Be Doing Elf on the Shelf


The Elf on the Shelf phenomenon hasn't dissipated over the years, and it's actually gotten a lot worse. It is now the thing that parents use to get their kids to behave so that Santa can get them that gift they've asked for. I have seen photos upon photos of these little Elfs causing mischief in friends homes on Facebook, and they are all over the web. While at first, I thought it was cute I no longer do. The Elf on the Shelf craze has taken over, and I think it's also taken over some parents as well.  So while I don't judge anyone for doing what they do, here are my 5 reasons why we won't be doing Elf on the Shelf at our house.


1.  Christmas is supposed to be about fun. It is no fun having to wake up in the middle of the night and try and re-create some sort of mischievous act that these little Elves are supposed to be doing. I am not that creative, and while Pinterest gives me lots of ideas, I think I'm just too lazy to do them. I can also tell you that I forgot to move her at least 50% of the time I had her. It's also no fun telling a 3yr old that she can't touch something because guess what? SHE'S GOING TO TOUCH IT!

2.  I want a good night's sleep! I would rather go to bed and forget about everything until I wake up in the morning. I don't want to spend the night tossing and turning trying to think of what elaborate trick I'm going to come up with the very next day. I also don't want to get out of bed once I finally fall asleep to put that trick into motion. Even when I get up, I would prefer not to have to clean up a mess that I made. Ain't nobody got time for that!

3.  Are you kidding me? While it's all supposed to be in good sport, I would rather my daughter not be terrified thinking that because she did something wrong, that the creepy little Elf was going to snitch on her to Santa and she'd be on his naughty list. For someone who's supposed to be watching and making sure that the kids are good, they sure come up with some naughty things to do themselves. Kinda contradictory isn't it?


4. Am I the only one who thinks these Elf's are creepy? I would walk around the house, and it just seems like her beady little eyes would follow me everywhere with that smile forever on her face. It's like she's taunting me to do something. So Santa sees you when you're sleeping, and he knows when you're awake. He also knows if you've been bad or good. So why does he need an Elf to report to him? And guess what you little creepy Elf, do you know what happens to snitches?

5.  I would rather just keep it simple. You don't do what you're supposed to do, and your Christmas will be canceled. I don't need an Elf to keep my kids in check, I can do that myself! JUST ASK MY KIDS!

Give the Gift of Converse this Christmas


For as long as I can remember I've always been a sneaker kind of girl. I grew up with two brothers and even as an adult I've always felt a lot more comfortable in jeans and sneakers than I've ever done in skirts/dresses and heels. I can say with surety that I have more Converse kicks than I do any other shoe in my closet. After I had Madison it made even more sense for me to get even more, and I've always been asked, do you have a pair of converse for every outfit? And my answer has always been a resounding "yes". As most of you know I was former military. Being in the military means deployments, field duties (not the fun kind) and lots and lots of military training. What that also means is many weeks and sometimes months away from your family. I remember the first time I left my now pre-schooler Madison who is now 3 years old. As a service member we're given 6 weeks of maternity leave and once those 6 weeks are done, you once again belong to Uncle Sam. My daughter was 3 months old when I was told that we were going to the field for 3 weeks. 3 weeks of not seeing your 3 month old is tough when you're only a few hundred miles away but it's nothing compared to those who have left theirs and went to Afghanistan for 9 - 12 month deployments. Yes it does happen. I've also spent Thanksgiving and Christmas away from my family. Now I wish that CloudPets™ was around when I was in the army. Why? Get a Letter From Santa this Christmas


Christmas means quite a lot to us. It's the one time that we get together as a family, share gifts and reminisce of the year that has passed us by. For the kids it's all about what Santa is bringing for them on that day. They have already made their list but we all know that Santa is also checking their list and making sure that they are "nice" enough to get what they asked for. There is nothing quite like opening up a gift from Santa. We've already got our cookies and milk for Santa that we plan on leaving at the fireplace for him. However this year there will be an even special surprise for Madison waiting in her stocking this year as well. This year one of our favorite store Safeway will helping with the Letter From Santa program. I remember the days when I would write my own letters to Santa letting him know what I wanted. I have never gotten a letter back so can you imagine her surprise when she opens her letter on Christmas from the Jolly Old St. Nick himself? The great thing about all of this is that it is absolutely FREE.

I love receiving flowers, I mean who doesn't? Not only do they smell great but they make me feel special and it's not everyday I'm made to feel special. Now my daughter is only 3 but she has fallen in love with our next door neighbor. When we first moved into our home we found out that she had just lost her husband. She invited us to visit at anytime because she lived all alone and doesn't get much company. With my anxiety, I'm not comfortable visiting on a daily basis, or at all to be honest. My daughter however has adopted her as her "grandmother". Every morning she would get up and look out the door and say "Joyce is home, I'm going to see her" and I would have to say "it's too early, wait until it's at least 10am". She would run across the street, I live in a cul-de-sac so it's very safe, and ring her doorbell. She has NEVER turned her away and would sit outside with her, or invite her in, for as long as she wants. I've always chalked it up to her being lonely and wanting the company.


Well when our flowers arrived I said "these are beautiful and we'll get to put cookies in there" but Madison wasn't thinking about the flowers or the cookie jar. She said "I want to give them to Joyce" without hesitation. It really shocked me to hear a 3 year old wanting to give and not think of herself as most kids her age are prone to do. I told her to get her jacket and we headed across the street. You may have seen the following photo on Instagram, but Joyce was extremely happy to receive them and I couldn't be more proud of Madison. This is what the holidays is all about, spreading and giving cheer to those who need it most.

We received our beautiful Snoopy Cookie Jar Floral Arrangement today from @teleflora and Madison did something wonderful and I'm so proud of her. She said "I want to give them to Joyce". Joyce is our elderly neighbor who lost her husband this year and lives all alone. She was really happy to get them.
