Easy Alaska Pollock and Veggies Foil Packet Dinner ~ #AskForAlaska

I’m going to be honest here, like I usually am. This meal is SUPER EASY to prepare, but one of my most difficult to photograph. I prepared this meal three times until I was happy with the end results. The first time we prepared it, the weather wasn’t cooperating, so my photos looked rather dark, and the second time, I was being a mother and doing so many things at once that I forgot it in the oven, so my asparagus weren’t as firm as I wanted them to be. They do say that the third time’s a charm and while it still isn’t perfect, it does look a whole lot better. I do have to say that each time it tasted absolutely amazing. My husband seemed to think that it was just my way of wanting to eat and enjoy it each time, and he may just be right, because it was delicious!

Since the year begun, we’ve been thoroughly enjoying eating and living healthier, and so far the results speak for themselves. I’ve lost a few pounds, nothing to brag about, and the kids have actually been looking forward to dinner, and even Madison, my youngest, has been making her way into the kitchen. We have been trying new veggies and incorporating a lot more fish into our diet, and you may remember that was one of the goal that we were trying to achieve this year, and so far so good.

When you’re a mom, it may seem that you’re being pulled every which way. It can get hectic in my household, and to be honest, I don’t have the time to spend hours in the kitchen preparing dinner. So for me, it’s all about simplicity, but still great tasting, healthy and nutritious, and wild-caught Alaska whitefish varieties such as halibut, sablefish, sole, Alaska pollock and cod are just that.

They are sold fresh and frozen all year round and can be made into delicious recipes for your entire family to enjoy as a way to get them to eat more seafood. That’s why today I’m sharing with you this very easy and delicious Alaska Pollock and Veggie Foil Packet dinner that even the kids can do.

Alaska Pollock and Veggies Foil Packet Dinner

Ingredients:

  • 3 medium organic potatoes, sliced thinly and divided into 6 portions
  • 2 bundles of organic asparagus, also divided into 6 portions
  • Extra virgin olive oil (preferably organic and about 2 tablespoons per foil packet)
  • 3 lemons cut in half
  • Old Bay seasoning
  • salt and pepper to taste
  • (Thinly sliced organic green onions and lemon slices for garnish)

Directions:

  1. Pre-heat the oven to 400F.
  1. On about a 12″ sheet of foil, add your portion of potatoes and asparagus on the center of the foil. Make sure potatoes are sliced very thin so they cook through in the same amount of time it takes the Alaska pollock to cook.
  1. Evenly drizzle the potatoes and asparagus with about 1 tablespoon of olive oil, season with salt and pepper. Continue the process for each of your portions.
  1. Top each pile of potatoes and asparagus with 1 Alaska pollock fillet.
  1. Evenly drizzle each Alaska pollock fillet with about 1 tablespoon olive oil, then squeeze half the juice of the lemon over the Alaska pollock fillet.
  1. Next, season each Alaska pollock fillet with salt, pepper and old bay seasoning.
  1. Seal your foil packets tightly to make sure that your olive oil and lemon juices don’t leak through.
  1. Place your packets on a baking sheet and bake for about 30 minutes. Remove from the oven, garnish with your green onions and lemons, and serve.

Now there are two ways that you can serve your foil packets. You can either eat directly from your foil packet or you can plate it. The older kids prefer eating directly from the packets as there are no dishes to clean up afterwards, plastic forks works wonders too. For the younger kids, I suggest plating it.
