Italian Sausage Stuffed Bell Peppers

I love preparing sausages in quite a few of my meals, especially since they’re so flavorful. Today I want to share a quick and easy meal with a new variation. While I would use crumbled sausages in my stuffed peppers, I decided to use the sausage links since the kids complained that they would love bigger portions of sausages. Italian Sausage Stuffed Bell Peppers

Ingredients

6 Bell Peppers

1 package Johnsonville Italian Sausage (with 5 links)

1 cup cooked rice

1 cup chopped onion

1 cup finely chopped tomatoes

½ cup parsley

½ cup shredded cheese of choice

½ cup shredded mozzarella cheese (for topping)

salt and pepper to taste

Directions 

Preheat oven to 350º.

Remove the top of your bell peppers including the seed and membranes and discard. You can save the top of your peppers as a cover, but there is really no need to.

Prepare your sausages in your Johnsonville Sizzling Sausage Grill. Once they’re completely done, chop them into small pieces.

In a large skillet over medium heat, sauté your onions, tomatoes, garlic and parsley until soft. Next add your rice, sausages, salt, pepper and shredded cheese and stir until your cheese is melted.

Spoon your sausage mixture into bell peppers and top with your mozzarella cheese.

Place your bell peppers into a baking dish (I used an aluminum tray) with a little water on the bottom, and cover with aluminum foil.

Bake for 30 minutes and until your cheese is completely melted. Serve and enjoy!
