Gluten Free Buffalo Chicken Roll-Ups

Did you miss me? It seems like it’s been ages since I’ve been here in my little space of the blogosphere. I celebrated my 40th birthday and I literally hit the ground running and never stopped. It was an entire week of celebration and I am as excited to be 40 as I was to be 20. After all 40 is the new 20 isn’t it? The party hasn’t stopped but I wanted to stop in and share a quick appetizer that is not only easy to make but is absolutely delicious. Our Buffalo Chicken Roll-Ups is a great hit at parties and because it’s gluten free can be served to those who can’t eat gluten. You know who those friends are! Who said that gluten free can’t be delicious too? Enjoy our Buffalo Chicken Roll-Ups!

Buffalo Chicken Roll-Ups

(makes 8)

Ingredients

8 slices good quality chicken lunchmeat

1/2 cup blue cheese crumbles

1/4 cup buffalo sauce

4 thin carrot slices + extra for serving

4 thin celery slices + extra for serving

1 green onion, finely sliced


Instructions

Lay one piece of chicken on a piece of parchment paper.

Sprinkle one tablespoon of blue cheese at the end closest to you.

Place a celery or carrot stick on top of the blue cheese.

Fold the chicken over the blue cheese and carrot/celery, and tightly roll it until you reach the opposite end.

Place the roll seam-side down on your serving platter. If desired, you can place a toothpick in the center to ensure it doesn’t unroll.

Repeat the process until you’ve used all of the chicken slices.

Once you’ve made all of your rolls, lightly drizzle the buffalo sauce over-the-top.

If desired, you can sprinkle some green onions on top for color and flavor.

Serve the extra buffalo sauce on the side along with extra carrot and celery slices.


Notes:

If you love buffalo chicken, you’re going to love this recipe. Chicken lunchmeat, blue cheese, and a light drizzle of buffalo sauce have all the classic flavors of buffalo chicken in a quick and healthy snack!

Serve these as a light lunch or snack, or make a larger batch to serve at a party. This recipe can be easily double or tripled!

We kept these gluten-free, but you could serve mini sub rolls on the side, so your guests can make little sandwiches.

When purchasing your lunch meat, we highly recommend using a good quality, all natural variety. Since all lunchmeat can vary in size, you’ll also want to be sure you’re getting larger slices. Smaller slices will be more difficult to roll.

The carrot and celery sticks are optional, but we like the added texture it gives!
