Breakfast is the most important meal of the day at our house, but it’s not the only meal we eat together. As a mother, I only want what’s best for my family, and that includes the foods that we eat. My kids are very picky eaters but I however like to keep my pantry stocked with the foods that I know they’re going to love and eat. Foods that make me THINK that I’m a better mom for providing. We all know how expensive organic food can be, but with Sprouts Farmers Markets deals and specials, you’re always saving. Madison’s favorite cereal is the Cascadian Farm Cinnamon Crunch Cereal and her day isn’t complete without it.

Whenever I go shopping I also stock up on our Annie’s fruit snacks which we take with us whenever we’re going out. If you’re a mom, you know how important snacks are to kids and you just can’t leave home without them.

With this being spring, the weather is warming up, and that means for us that we’ll be outdoors more. That, however, also means that we spend a lot more energy running around, so when we get home, we want something nutritious to eat.

I decided to stock up this April at their Better For You Brand Sale because Sprouts Farmers Market not only takes care of the breakfast and snacks, they also take care of dinner as well. Today I’m sharing with you our Chicken and Broccoli Stuffed Spaghetti Squash with Homemade Garlic Parmesan Sauce, of which my ingredients were purchased at my own Sprouts Farmers Market.

Chicken & Broccoli Stuffed Spaghetti Squash with Homemade Garlic Parmesan Sauce

Ingredients (for the squash)

1 large spaghetti squash

2 tablespoons of Olive oil

Salt & pepper

1 boneless skinless chicken breast, cooked and diced

1 cup of cooked broccoli florets

½ cup of shredded mozzarella cheese

Ingredients (for the sauce)

4 tablespoons of butter

1/3 cup flour

1 garlic clove, crushed and finely chopped

2 cups of milk

½ cup of grated parmesan cheese ( the shaker cheese is fine if you don’t have a block)

1 teaspoon Italian Blend Seasoning

Salt & Pepper

(all ingredients purchased at my local Sprouts Famers Market)

Directions (for the squash)

Pre Heat the oven to 400

Cut the Spaghetti squash in half longways

Place on a foil-covered cookie sheet, drizzle with Olive Oil and Salt/Pepper

Roast in the oven for 40 minutes or until fork-tender.  Remove seeds after roasting, it is easier.

While the squash is roasting we can make the sauce!

Directions (for the sauce)

Add the garlic, butter, and flour to a large pot and melt over medium-low heat. Stir in the flour to make a paste.

Add the milk, increase the heat to medium-high, and whisk briskly until smooth. Bring to a boil, reduce to a simmer. The sauce will thicken as it simmers.

Mix in the parmesan cheese, Italian seasoning, and salt/pepper to taste.

Adjust cheese, garlic, and seasonings to your liking at this point.  Once the sauce has thickened, remove it from the heat.

Using a fork, scrape the inside of the squash to loosen it up.  Add chicken and broccoli to each half.

Cover with the garlic parmesan sauce, mozzarella, and more parmesan (if desired)

Bake on 350 for about 15-20 minutes. Most of the cooking is done prior to this stage, so this time is used to basically just warm up everything and melt the cheese.
