Celebrate Spring by Eating Healthier with Products from Sprouts Farmers Market - #BetterForYouBrandSale

Breakfast is the most important meal of the day at our house, but it's not the only meal we eat together. As a mother, I only want what's best for my family and that includes the foods that we eat. However buying high quality organic food doesn't always have to cost a lot of money. Many thanks to Small Planet Foods for sponsoring today’s story and encouraging me to get healthy in the kitchen! I shop at Sprouts Farmers Market where I get the quality that I need without the exorbitant price. My kids are very picky eaters but I however like to keep my pantry stocked with the foods that I know they're going to love and eat. Foods that make me THINK that I'm a better mom for providing. We all know how expensive organic food can be, but with Sprouts Farmers Markets deals and specials, you're always saving. Madison's favorite cereal is the Cascadian Farm Cinnamon Crunch Cereal and her day isn't complete without it. Whenever I go shopping I also stock up on our Annie's fruit snacks which we take with us whenever we're going out. If you're a mom, you know how important snacks are to kids and you just can't leave home without them.

With this being Spring, the weather is warming up and that means for us that we'll be outdoors more. That, however also means that we spent a lot more energy running around, so when we get home we want something nutritious to eat. I decided to stock up this April at their Better For You Brand Sale because Sprouts Farmers Market not only takes care of the breakfast and snacks, they also take care of dinner as well. Today I'm sharing with you our Chicken and Broccoli Stuffed Spaghetti Squash with Homemade Garlic Parmesan Sauce, of which my ingredients were purchased at my own Sprouts Farmers Market.

Chicken & Broccoli Stuffed Spaghetti Squash with Homemade Garlic Parmesan Sauce

For the Squash
1 large spaghetti squash
2 tablespoons of Olive oil
Salt & pepper
1 boneless skinless chicken breast, cooked and diced
1 cup of cooked broccoli florets
½ cup of shredded mozzarella cheese

For the sauce
4 tablespoons of butter
1/3 cup flour
1 garlic clove, crushed and finely chopped
2 cups of milk
½ cup of grated parmesan cheese ( the shaker cheese is fine if you don’t have a block)
1 teaspoon Italian Blend Seasoning
Salt & Pepper

(all ingredients purchased at my local Sprouts Famers Market)

For the squash

Pre Heat the oven to 400

Cut the Spaghetti squash in half long ways

Place on a foil covered cookie sheet, drizzle with Olive Oil and Salt/Pepper

Roast in the oven for 40 minutes or until fork tender.  Remove seeds after roasting, it is easier.

While the squash is roasting we can make the sauce!

For the sauce

Add the garlic, butter and flour to a large pot and melt over medium low heat, stir in the flour to make a paste.

Add the milk, increase heat to medium high and whisk briskly until smooth.  Bring to a boil, reduce to simmer.  Sauce will thicken as it simmers.

Mix in the parmesan cheese, Italian seasoning and salt/pepper to taste.

Adjust cheese, garlic and seasonings to your liking at this point.  Once sauce has thickened, remove from heat.

Using a fork, scrape the inside of the squash to loosen it up.  Add chicken and broccoli to each half.

Cover with the garlic parmesan sauce, mozzarella and more parmesan (if desired)

Bake on 350 for about 15-20 minutes. Most of the cooking is done prior to this stage, so this time is used to basically just warm up everything and melt the cheese.

  1. It's a shame because I don't think we have a Sprouts anywhere near here, but I wish we did. A lot of those products are on my wish list.

    1. I'm so sorry Tamara. Here's hoping that they'll be in your neck of the woods some day soon.

  2. Oh my goodness, your Chicken & Broccoli Stuffed Spaghetti Squash looks amazing! I love chicken and broccoli together but have never had spaghetti squash. I will have to try this one day. Thanks so much for sharing the recipe. :)

    1. Thank you Jess and I hope you can try it. You'll just love it!

  3. I would love to have Sprouts expand into Maryland. Sadly they don't have much of a presence on the East Coast.

    1. No they don't unfortunately and I hope they do expand there as well.

  4. I love finding new recipes for squash. It's hard for me to decide what to do with it. That looks really yummy.

  5. That's a great looking recipe! I wish we had a sprouts near us, too. I live so far from anything but a traditional supermarket and get so blah with shoppoing sometimes.

    1. Then you would most certainly love Sprouts. I almost don't shop anywhere else when it comes to my groceries.

  6. I've made spaghetti and ravioli from this type of squash before but hadn't tried the concept you've shown. I like it! I will absolutely use your recipe. Thanks for sharing it!

  7. Now that's a great way to make the spaghetti squash!! It is nice to find quality ingredients you want to use for your family. I'm happy to hear about Sprouts

  9. I have never heard of Sprouts before, I do not think we have one in Florida. I so need to try this recipe, what a healthier option than pasta.

    1. It truly is a healthier option and I think your kids would love it. Mine do!

  10. I had never heard of this company until I read about them on your post. They have some amazing products and ones that I am sure the kids would enjoy and are so much healthier that other products. Thanks for sharing this one.
