Mini Cheesy Corn Dog Muffins

Breakfast should be the most important meal of the day. Unfortunately sometimes it’s so easy to skip it. When you’re running late all you want to do is grab something quick and usually unhealthy and run out the door. Or you may not grab anything at all. On the weekends we try and eat breakfast together as a family. I love going out to eat and so on a Sunday morning you may hear me shouting throughout the house “HEY GET UP I WANT TO GO TO BREAKFAST”. My kids on the other hand, while they love going out as much as I do, on occasion, they would much prefer to sleep in. Trust me that’s something I would love to do myself but as a mother it’s sometimes difficult. There is so much work to do. On days like that I tend to make my Mini Cheesy Corn Dog Muffins. Not only are they a delicious treat, but made with turkey, they are also a whole lot healthier for you. Also think about game night, what could be better?

Here is what you’ll need:

(makes 24 mini muffins)

Ingredients

5 turkey hot dogs

1 cup shredded Mexican cheese blend

1/2 cup all-purpose flour

1/2 cup cornmeal

2 tablespoons sugar

1 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1/4 cup plain Greek yogurt (or sour cream)

1/4 cup milk

4 tablespoons melted butter

1 egg

Hot sauce, optional


Instructions

Add all of the dry ingredients and the cheese to a large bowl and stir to combine. Set aside.

In another bowl, add the yogurt, milk, melted butter, egg and hot sauce. Whisk until thoroughly combined.

Add the wet ingredients to the dry and stir until just combined. Don’t overmix.

Liberally spray the muffin tins with nonstick cooking spray.

Using a measuring spoon, add one tablespoon of batter to each cup.

Cut each hot dog into 5 pieces and press each piece into the center of the batter.

Bake for 9-10 minutes or until the edges of the cornbread are golden brown. Don’t over bake for the cornbread will be dry.

Serve with mustard and ketchup for dipping!
