Shrimp Salad Bites

It’s Monday morning and the first work day of the week. We are here patiently waiting for Spring to arrive but it seems Old Man Winter is here to stay. We have had more snow in the past week than we’ve had for the entire season of Winter. Just a few weeks ago, Valentines Day to be exact, we had temperatures in the 70’s where everyone was outside wearing shorts and tanks. Now we’re all bundled up once again with more snow in our future. Well today I have something that will take your mind off the upcoming weather. I want to share with you our Shrimp Salad Bites. These not only make great appetizers but are perfect to take with you for lunch. Save some of that money that you spend buying lunch and take your own to work with you. This Shrimp Salad Bite will be sure to satisfy your palette and have you begging for more. Here’s another surprise. Yields: 30 servings as an appetizer / 4 servings as lunch

Ready in 10 minutes

Ingredients:

3⁄4 lb cooked shrimp, peeled and tails removed

2 celery stalks, chopped

1 tablespoon red onion, minced

2 tablespoons mayonnaise

1 tablespoon non-fat plain Greek yogurt

Salt and pepper to taste

1 large cucumber, sliced

Chives, minced


Directions:

Combine shrimp, celery, red onion, mayonnaise, and yogurt in a bowl. Season with salt and pepper.

Arrange cucumber slices on a platter and top each with a heaping tablespoon of shrimp salad. Garnish with minced chives.
