Peppermint Kiss Cake Mix Cookies

We’re still on the beautiful island of St. Vincent and the Grenadines but we promise to be back soon. As a matter of fact we will be back on New Years Day. Today I want to share with you something that I think you will love. I know my kids love them. We love baking cookies and making cakes and who said you couldn’t make cookies with cake mixes. Today I bring to you our Peppermint Kiss Cake Mix Cookies, after all it’s still peppermint season. While we used white cake mix for this recipe you can experiment with whatever flavor cake mix you would love to use instead. After all you can have a Red Velvet Peppermint Cake Mix Cookie, who says you can’t? I hope you enjoy making them as much as we did eating them.

Here is what you’ll need:-

Ingredients:

1 box of white cake mix (any brand)

3 eggs

1/3 C. vegetable oil

½ C. red, white and green Christmas sprinkles

2 dozen Hershey’s Peppermint Kiss

Wilton cookie scoop

Directions:

#1. Preheat your oven to 350 degrees and line your baking sheets with parchment paper.

#2. Combine the egg, oil and cake mix, mixing well. Add in the ½ cup of Christmas sprinkles to the dough. Feel free to add more if you think it needs it.

#3. Place the dough in the fridge for about 15 minutes to set up.

#4. Remove the dough from the fridge and using the cookie scoop to scoop the dough into 1” balls. Roll them between your hands to make them perfectly round and place about 2” a part on the baking sheets.

#5. Bake 8-10 minutes. Do not over bake. These cookies are best a little chewy.

**While they are baking unwrap the Hershey’s Peppermint Kiss’

#6. Remove the cookies from the oven and place one peppermint Kiss directly in the center of each cookie. Allow the cookies to cool a few hours prior to storing.
